Blue rare. And it's not bloody, they drain the blood during cleaning, before they cook it. At least in the States they do. Maybe where you're all from they have different laws about what is legally allowed on a plate.
Pittsburgh Rare (black & blue) is the best for me!! Charred on the outside/cool red in the center!! MMMMMM MMMMMMM pour a nice glass of Barolo and I'm good too go.
