It will take a while for people to begin converting their extensions but the stable 1.5 is out today.

It's a good news, i'll test it locally first, and will upgrade the websites to 1.5 stable version after the extensions I used has been converted to 1.5

Is it ok for 1.5 to go live ?

Why would it not be ok for Joomla 1.5 to go live? It has gone through extended tests so yes, I'd definitely use it on a production website. However, if you're running a well established website based on Joomla 1.0.x series then I'd probably keep it that way.

Use J!1.5 for new projects only.

Yes go live on it. But if you are running a 1.0.13 version don't change because your extensions won't be compatible

True, not all extensions are ready to be used on J!1.5, so I'd give it some time before moving my existing sites to the 1.5.x series.

strange, you'd seem to think that they would put up a live demo on opening day...

I've read there is no easy way to upgrade to 1.5 and many extensions are not ready yet... so it will be a while before all Joomla users take up 1.5... and many may not at all...

That's more like a battle for survival, and the best extensions will surely make it to Joomla 1.5 since it has so much more to give compared to the older generation.
