There is no "best" otherwise there would only be one.... they all have different strengths and weaknesses so it comes down to what you need for your store. I assume you mean card transactions? If you do then the most professional is by having the transaction take place on site with either a true merchant account and a gateway or a service like PayPal Pro
Best ecommerce software is not open source software. If you have plan to run serious business then check x-cart or even Elastic Path(Java based ecommerce system)

Oscommerce is for small business like dropship products. Real business need commercial shop cart. Personally I never will buy from oscommerce based site because its look like cheap eshop.
