    OK, off topic - but great bacon?

    From the salmon belly. Whole salmon, the fatty belly flaps. I cure them and smoke them. Love serving them as garnish with other fish - artic char, for one, with a smoked tomato-tarragon broth, and then I finely julienne leeks and fry them to a "carbonized" finish - looks like sea urchin spines. The smoke of the salmon "bacon" and tomato-tarragon broth, slight bitter/sweetness of the leeks, great with the mild char.

    That sounds good! I love salmon, especially smoked salmon. If it wasn't so expensive I'd eat it almost daily!

    I've got a dedicated stainless cold smoker. One of my favorite implements. handles a ton of fish - I like to use both applewood for softness and the fruit scent, and hickory to add some edge and, well, you know, that hickory character; all while never rising above 90F, and only takes about 90 minutes for an unbelievable smoke. Fish stays moist, great gravlax. I love salmon as well - nothing like a pristine, whole fish.

    Considering how much smoked salmon costs I wonder if I'd be better off getting a small smoker and buying fresh fish! :eek:

    I buy loads of it when on special, but the usual $11-$15 a pound for smoked is just a bit out there for daily eating. Especially since I can eat alot of it! :p

    My cold smoker cost me a pretty penny, but it was for our commercial use. If you like hot smoked salmon (I prefer cold smoked), I really like those bullet smokers. I know our unit, even as expensive as it was, paid for itself many times over.

    I think there is a subtle distinction to be made here, Naughty Son. I'd say the only reason for all arguments is that we believe we're right, and want others to see the rightness of our point of view. In other words, we seek to convince them. I think saying arguments are an attempt to "impose our beliefs" is painting it a bit too broadly.

    I don't see an issue with the attempt to convince, if we believe we're right, I only have an issue with needing affirmation if the listener disagrees. Arguments are by definition opposing points of view, and I'd be pretty bored if we all had the same point of view. On the other hand, I think we'd all be better off if we can conclude, at the end of debate, with "great, I've learned something - thanks!" or "respectfully, I disagree. Now, want a beer?"

    Sure it is misconception when veggie can work 2 hours while all the rest work 10 ! They are useless...

    About pets and food. Don't be mislead here. I highly respect all animals and take good care of them. Afterall this way I take good care of myself ;)

    I know your joking... But this is just for the sake of anyone who might be interested. I've always hear of vegetarians gaining energy and mental alertness when they stop eating meat, not the other way around.

    and losing strength among others. I have read many, many horror stories of 'vegetarians' not gaining energy or mental altertness, especially not over the long term.

    There is also a huge difference from eating like crap with meat, or eating healthy with meat.

    It is difficult with a strictly vegan diet to manage getting all the nutrients necessary to a healthy life. Difficult, but certainly not impossible. It just takes more care. I have a number of sikh friends who are vegans who do quite well. Here, an interesting article entitled the Nutritional Importance of Animal Source Foods. It is an article from the Journal of Nutrition, by two scientists in the area of nutrition research - Suzanne P. Murphy (Cancer Research Center of Hawaii, University of Hawaii) and Lindsay H. Allen (Department of Nutrition, University of California, Davis). The article states in part:

    Cramming your gullet with meat isn't good. But then, cramming your gullet with anything isn't good. Grim is right - the central idea is healthy eating.

    Vegetarian extremes and Vegetarian deficiences are very harmful. B-12 is only found in meat, fish, eggs, milk or supplements. A vegetarian who a avoids everything on that list will suffer from a lack of B-12 with disasterous consequences.

    Wikipedia says
    There are unhealthy ways to be a vegetarian. For example, eating too much of one food item, juicing too much or avoiding fats. You also need fat. There is no need to go to the extreme.

    When making our eating choices, we have to really understand the benefits and dangers involved.

    Protein is also pretty hard to get simply via vegetables ;) It can be done, it however is not easy.
