Once you have chosen the keywords, whats the best way to target them? I know you can put it in the megatag, domain, title and some in the content itself, but is there any other way to target to keywords beside these methods? I am trying to target my keywords better for my site
The best thing to do is to get relevant links from sites in your market. These links will provide much more ranking power then links from unrelated websites. It sounds like you have the on page stuff in place pretty well so the only other way to target your keywords is through link building. Hope that helps.
Use some of the keywords in links to your site. If you have links to each page on site make sure you use keyword in ink also.

maybe this is your target keyword "China Mobile Phones" So many competitors: 68,800,000 your website is new, so choose another keywords that get your ranking better
I like to type the keyword phrase in quotes in google and look for phrases under 100,000. With good link building I can normally rank well.

its part of SEO, challenging your self with how far can you go on achieving your goal. if your determined, you will achieve it surely. also, the number competitors is not basis of choosing the right keyword, its the number of searches of the keywords, that is why keyword tools are made.

link to sites that are related to your interest, place your keywords one at a time in your articles but never spam them and also participate in forums and use your keyword with anchor text as your signature
Use your keywords as anchor text when building links and you can also put your keywords on alt tags of an image but put it in a descriptive way.
