    I love cheese. What are your favorites, if any?

    Since there are hundreds of them, I chose the seemingly common ones for Canada, USA, the UK, and Australia. I'm sorry if I missed your favorites. Feel free to list them below, if you like. :)

    I love blue cheese! Although it may look unappetizing to some.

    Rochefort is the way to go. The expensive ones from France. Try that and you are hooked.

    I hate cheese. I eat cheese on pizza or in an omelette but can't stand it with any other meal or on its own.

    Not many in the list above. But, I love cheese, especially with wine. In no particular order:

    France:

    Osau Iraty
    Tomme de Fedou;
    Epoisse de Bourgogne;
    aged crotin;
    laguiole
    pont l'eveque
    Raclette
    Roquefort
    Bleu D'Auvergne
    Tomme de Savoie

    Spain:

    Garrotxa
    Manchego

    Switzerland:

    Gruyere
    Vacherin Fribourgeois

    England
    Double Gloucester
    Stilton

    U.S.:
    Humboldt Fog
    Schwarz und Weiss, triple cream Amish blue

    I love goat cheeses for their acid level, generally, sheep's milk cheeses for their tendency to really capture the herbal and grassy character of where the milk comes from; that, and the hint of lanolin - stinky ole' sheep. I love the nut quality in "swiss" variants. I love blues, especially authentic, naturally-blued Roquefort - blue and apple tart.....hmmm.

    infonote - wow, your Gbejniet looks fabulous. Can you go into it a bit more - what's its character?

    Tim, hahhaha - just a guy who loves good things. I love artisanal producers, and do what I can to support them...
