If I set my domain to redirect automatically to an affiliate offer landing page, will that have any effect on QS?

That would depend on the page(s).

    Vague questions get vague answers:)

A redirect neither hurts nor helps you. Where ever the final automatic redirect lands on, that's the page Google will factor into the quality score. Many sites use redirects for tracking purposes (from the initial click) so there's no way simply having a redirect will harm or help you.
