One way I can think of to start building traffic and profiles is to maybe find some of the larger christian related forums, start posting as an active and quality member then include a link in your signature to your dating site.
You could also write some articles and submit to places like ezinarticles.com and then have a link back to your site.

Blogs can also be a great way to build a relationship with your customers or potential customers, by having a place where you can speak about your product or service. It can also be great for branding you or your business, as well. There are at least 3 reasons for having your own blog... 1. You can quickly post content online 2. Search engines love it and spider it fast... meaning, you content gets into the search engine fast (= more traffic = more sales) 3. Instead of sending a full message to your list, you can send the first part (teaser) and then refer to your blog to read the rest. Advantage: Your shorter email will get easier past spam filters and this way your deliver ability rate will go up.

I have an offline idea. Go to a Christian church or prayer group, tell them about your product and make them regiester. They will then tell their Christian friends and so. This will result in viral marketing through word of mouth.
I think that if you want more profiles and traffic you will first need to have some profiles. It is similar to starting a forum in that there is little reason for a person to join unless there are other members there already. I would have little interest in joining a dating site if there are not any women there. I would suggest offering some sort of incentive to get new members to sign up. Once you start building a database of members and profiles you will attract others to join as well.
