Check this post from problogger. A good read for anyone interested in finding out the most popular plugins. I like Intouch plugin for handling contact queries , pagenavi plugin which splits posts into pages , shortstat plugin for giving statistics .
Shortstat takes up lots of mysql database space the last time I use it, it kinda slows down your blog too.You can try out slimstats, something like shortstats but uses less resources.
I use Smart update pinger. The idea is that it doesn't ping when you edit previously published posts, thus in theory it keeps you from being banned for "pingspamming." But I like it because it shows a log of the latest pings along with errors. Can be useful if you ping multiple services.

For anti-spam I use: Akismet, Spam Karma, Bad Behavior. Bad Behavior catches about 1200 intruders a week (at least that is what the stats claim). Adhesive to create sticky posts. Page Comment editting to show all comments without limit. Secure Contact Form to hide my email address and have some anti-spam capabilities.
