Is it possible to have one LLC and have it cover all your websites? Example: XYZ LLC provides protection to: website 1 website 2 etc. Is there any special paper work that needs to be filed to have this setup for each additional website or how would it be done. The LLC has already been established for a few years. Thanks for the help.

I'm sure it does. I do it with several sites/services. As long as you don't say "website 1 is my company" (officially), you would say "website 1, copyright XYZ". In other words, the websites are services; XYZ company provides them. You could trademark the websites, for protection from competitors, but you don't need to go through extra paperwork just to run the services...
A single LLC can certainly own more than one site. Whatever protection you have by virtue of the LLC would apply to all the sites. I am in the process of setting up a new LLC for myself dealing with just this issue. One of the problems for me is that you have to make sure the LLC owns everything. This is both for all new sites and all my older sites I want to have under the LLC. So all domains registered under LLC name. All hosting paid for by LLC, for benefit of LLC sites ONLY All ad company accounts are with LLC name and tax ID. LLC gets income and deductions related to these sites for taxes. There are many other considerations as well, but many depend on your particular situation. It is not as simple as just declaring the LLC is the owner of your sites, reality has to reflect that as well. It is always best to consult with an attorney for advice of how best to set it up for your individual situation and needs.
Yeah i agree on the points browntwn made. If you're running an LLC, you need to make certain that everything goes through the LLC, otherwise you run a risk of losing the veil of seperation between LLC and individual if you're ever sued. Bad accounting can leave you vulnerable to personal liability. But yeah, assuming everything is in order, you shouldn't need to file seperate paperwork for each site.
Yep, something as simple and automatic as signing your name on a check can hold you personally liable.
My LLC covers all of my sites, everything that I write for clients, all of my buying and selling, etc. As I operate under the LLC name, all of my business is conducted together. If you have a business bank account and you do all of your transactions through that account, you are fine. Use your E.I.N. not your social security number too where applicable.
