Someone else's conversion rates may not even matter... If you have no marketing stills just think 0 conversions.... You can sell the best jewelry on the planet as people have a need and want for jewelry, but if you have poor marketing skills then do not expect much. People are always concerned with what someone else is doing or making. What works for someone that has seo/design/marketing skills will clearly not work for someone that does not have those skills... and I think it would be safe to say that a business would only do business with a known reputable company, not installing some app from a walk in solicitor that could bring down or even interfere with their existing platform.

When you go to the market place you can see which items are selling the most right now, the cost, the niche..etc. Another way is using common sense and just browsing Amazon.com...I find a lot of niche website ideas just by roaming around on this site.
