Well i am about to start a Health, Fitness or Weight Loss blog. I only want to choose white hat techniques like social bookmarking, guest blogging (very rarely) and often do-follow blog commenting. Ofcouse i have unique content. But when we target keywords in health or fitness blogs, these keywords are usually very competitiong (such as "arthritis symptoms"), already many pages have it. How can i rank for such keywords, which link building techniques should i use, How much work do i need to do

That's how ridiculous Google has gotten. If you show knowledge of how to publicize yourself online, you put yourself in Google's crosshairs. Write about what you like, not focusing on keywords. Don't put major keywords in H1 tags. Don't put targeted keywords in description. ^ This is white hat. No body does pure white hat. It isn't real. White hat is another name for doing online marketing blindly, while following the rules which change all the time.
I agree with you, but what i meant by white hat is technique which is somewhat safe from google updates. Like i don't want to spam my site with low quality xrumer blasts. I'm actualy somewhat experienced in seo. But for this niche, i don't know how to do it, I actually do keyword research, focus on keywords. I'm not saying to do pure whitehat.
