    Hi,

Is there any specific number of internal links that a webpage should have? Does too much internal linking effect link juice?

Not at all. Internal linking must be strong.

I read a year or so ago an interview with Matt Cutts which said that nofollow links (internal or external) "evaporate" link juice.

I have most pages linked from my main menu at the top and also from menus in the footer. Really important pages are linked from the main content section - but try to make this be for the user's benefit as well.

No it depends upon architecture of your websites, If you want visitors of your website to reach important pages quickly without any hard search, you can build a strong internal link structure without worrying about the page rank and link juice.
