Goal is to determine how many actions are considered as the primitive target for your website.
For instance, a shopping site's goal is when the customer checkout. And survey site's goal is when the visitors completed a form.

Funnel is the steps that the user took to complete the goal.
It is useful to determine at what step most likely drives the users away. For instance, if there are 5 pages in your survey. And somehow the bounce rate at, lets say the 3rd step is unusually high. Then there maybe something wrong with the questions on the 3rd page. It is great to get the stats to make changes to improve the ratio of goals completed.

Consider an example of ecommerce store.
When customer completes successful purchasing, showing a "thank you" page or "order confirmation" page is a Goal.
To complete the successful purchasing, customer has to follow step by step process like 1. address 2. shipping address 3. payment information 4. order review. All these are set in funnel one by one.

    Goals
A goal is a page that serve as conversion for the website which occurs when visitors dose something you want them to do.
    Funnels
A funnel represents the path that you want visitors to take on their way to converting to the goal. These pages allow you to see how frequently visitors abandon goals, and where they go. For example, funnels in an e-commerce goal may include the first page of your checkout process, then the shipping address info page, and finally the credit card information page which is your goal page.

just to add up, GA's Funnel helps you to determine how the goal is meet in a specific time span. It gives important details such as which pages a customer jump off the page, no. of successful goal conversions, etc.

Goal conversions are the primary metric for measuring how well your site fulfills business objectives. A goal is a website page which a visitor reaches once they have made a purchase or completed another desired action, such as a registration or download. In order to know about the settings of goals and funnels in google analytics.
