I'm having a similar issue, Google hasn't cached one of my sites for over 2 weeks and it usually gets cached every 3-5 days. Let me know if you figure out what the problem is lol.

cache interval could be more then 2 weeks.
crawl rate is determined by google automatically. we cant really do much with it.

that's right.. we can't do much with it.. but i believe that if google crawl your site more often the great change to get it cached..

Try if you can get a RSS version for your site and ping/submit it once you updated your site to let Google know your site has been updated.

Regularly update your site & R.S.S feeds are kinda must these days ... if you have a blog linked with the site then it will be a additional help for you

Try services like pingomatic etc... add your site to Google Webmaster Tools & add your site map if not already done...

the more frequently Google's crawler visits your site the more frequently it will be cached ...

Crawling is entirely depends on google it depends how you often update your site . i dont think their is an issue with google be patient for some time and your site will be cached soon.

Have you updated the content on any of your sites over the last 20 days?

Google like page content unique and most relabel. Google interval time is two week.

Most of my client and internal profile is ok but I am observing this on 3-4 sites. Its frankly making me a tad crazy.

I don't have much to offer as to why. Something is clearly afoot though. 1 or 2 are blog-like in nature so its not a freshness issue.
