hmmm, that's a good question, I'd like to know that as well, but unfortunately those guys are real clever engineers sitting in Google labs, and the algorithm they create are not so easy to understand.
I can explain some of them. The Java script you copy and paste on your site keeps track on the visitors. When you browse the site from your computer Your data goes as frames to the destination site. Ip addresses and many other information goes with it. IP address alone carries most of the information. IP's are divided around the countries of the world. So when a connection is established from that ip the tracker can easily know from where that traffic came from. This will explain visitors numbers (Unique and returned) Sources of Visitors (Country, City and even the end user if any one bought the real IP) Bounce rate are simply the amount of visited pages of the site. Browser information, operating system info along with other information are carried in the frames.
