For some reason, whenever I put PHP constants into my htaccess it throws up "500 Internal Server" Errors..Here is my current htaccess

Any idea what I am doing wrong here? Thanks in advance!

If you use cgi php on your hosting, you can't use php options in .htaccess

You can use php.ini if you can't use .htaccess but then again you need to ask your host how everything is setup.
