Black hat = fast results, high risk White hat = slow and steady results, low risk Grey hat = somewhere in the middle
Black hat means anything that is flouting the ethics and norms of SEO. It may involve tiny colored text that is same as page background color, etc. designed to keyword stuffing for search engines consumption, cloaking, doorway pages with little content, etc. are some of the forms of black hat seo.
