I try to use a range of headings, mostly h1-h5 and try to base them on the importance of the heading, plus relativity of the keywords used. How important are the headings in blog posts? Does it matter if you use h1, h2, or h3 in all of your headers, or does Google rank these keywords separately?
Header tags are just another tool in your SEO toolbelt. Using your keywords in the H1 tag helps the Google bot to see what your website is about. The bot gives extra weighted importance to the text in these header tags when crawling your site so you should try to get your keywords in these tags.

Let's say I have a page with only h3 tags on it - will these then take on the weight of an h1 since there are no h1 present? I had assumed that Google just ranks any header text higher than paragraphs and whatever, but I'm curious to see how it works between the different h1-h6's
I do not belive they will take on the same weight as an H1. The ranking goes as follows: H1 > H2 > H3 > H4 > H5 > H6 > other text
Based on my experience, it is relative to everything on your page. For example, if you only have a H3 for the keyword, color printer, then Google will consider it as one of the relevant keywords for that page.
