I'd like to use a storefront look for my next affiliate site without actually having a cart. The theme of the site is love if that help. Does anyone know where I could find one like this?

Why not rip out the cart from the theme?
    Then you have the stuff.

Hmm.. That's an idea but sounds difficult. I don't know anything about the cart themes really.

No. Not yet. I'm looking at all of my options first. I haven't decided what to do.

If you want to have a theme for affiliates, I recommend Squeeze Theme by Unique Blog Design! It's especially made for Affiliates.

These are all really nice but I will be promoting many products like a store. I'm trying to figure out the best way to make many pictures look neat and keep products organized into categories & subcategories.

This would be nice but there isn't room for descriptions. http://premiumthemes.net/multimedia-themes/inspiredbits.html

And this would be nice but the category info is way down at the bottom.

Actually for Snippet the cat links are in the header as well. :)

EDIT: Theme also comes with 4 different color schemes. http://premiumthemes.net/news/snippet-theme-gets-some-new-color-schemes-love.html

The squeeze theme, from what I could gather, lets you promote more than 1 product but emphasizes more on building an email list. What I am selling probably wouldn't work best with this. I am promoting actual products that they would go to the suppliers site to order.
I think that snippet theme would work best so far. but I think I'd like a bigger header.
