Which niche you suggest to create a directory? And what are the promoting tips for it?

My first idea was a directory about "health" but cancelled it.What do you think?

Well, if you've owned a website so far chances are you know quite a bit about the niche that website was/is in, about the best sites in that niche and on how to best promote your future directory in that niche. You've got a competitive advantage you shouldn't neglect.

Rob, sex is too broad. We need a smaller niche within sex. How about midget porn?

That's one of the worst niches for MFAs and general spam. Make a directory about something you know a little about, so you can more easily sort the fakes from the genuine sites. And like everyone is suggesting, in a niche that interests you. There's nothing worse than reviewing sites that you have no interest in.
