I just want to know what I need for a new site: I've heard alot about AllInOne SEO should I have google sitemaps? google analytics? what else is a must have? thanks

Really depends on the plugins that you're loading, how much traffic your site is getting and load on the server. I'd go ahead and add them in and see how things work. if you see the site slowing down, you know it's too much.
