I'm afraid there is no actual way of sending emails with fake date. Even if you set your server date incorrectly, most mail servers uses their own datetime as the acknowledged time flag. You would have to change the date on the receiving server in order to be able to do what you want. But then again, that's just my humble opinion...

Telnet directly to port 25 for smtp. All the date, subject, from, etc. that usually appear on your email full header can be faked. Not gonna say any more than that though, because it all depends on your intention, if it's for learning it's all good but not otherwise. (I just realized vista don't enable telnet command by default!)
