    Can someone tell me is therе any connection between text and bytes. I mean how much text is for example one byte

    1 character is 1 byte in ANSI
    1 character is 1 to 4 bytes in UTF-8;

    I believe the ratio is 1:3 in UTF8 but I'd have to go digging for it. I know when we estimate space for databases, that's the ratio we use.
