Once you know some basics of PHP or programming in general, php.net's documentation is the best reference out there.

I used the book 'php and mysql for dynamic websites'. They also have a companion website where you can download all the scripts that the book uses. I learned the most from manipulating the scripts from the book.

The best place to learn php is php.net itself!
this is the link to the manual:
    http://www.php.net/manual/en/

after you've learned the basics you can also find the best details with examples of any function that you want there!

you can also download the whole manual from here:
    http://www.php.net/download-docs.php

w3schools.com is also a great site to learn any web language! specially HTML/CSS
