Yeah, SERPs are updated all the time but I've also noticed an update in the number of backlinks to my site in Google Webmaster Tools.

Google updates every millisecond of the day. It has a new roll out on indexing every 1/10th second if not faster. Are you talking Page Rank? Cheers Dave
SERP is automatic depending on some parameters therefore there is not any serp update like they do in PR updates. SERP is done everysecond. Change your page's title and when your site's new version is cached in google your SERP will change, it is not related with update.
come on guys. there is no such term as search result update. learn a little how seearch query is processed at least from ealy works from google founder. it gets data from stored in databases so it's just sorted data with ranks. but internal real pagerank does update very offen - as soon as google sees new link to the page
