You know some websites when indexed by google, they have a larger listing because there is many sub website categories under their listing..
Like "chat, video, jokes...ect."
How do you do that?

If you have site with many categories, blogs, and there are back links to your site, many of those will index.
If you asking how to add more categories to directory then there is phpld software available with admin area from where you can add categories etc.

I think he's referring to 'site links' that appear under certain search results (often branded search), not number of indexed pages.
I think it comes with a good solid number of quality backlinks and high relevance to the searched term.

Talking about Authority sites, as artifexus said you can have that with high quality high number of back links and unique content.

When your site reaches a certain age and has a significant inner linking structure google will recognise the important pages and use them as "sitelinks".

You get "sitelinks" once Google recognize your site as a quality one in its niche and yep! it takes time + efforts.

I noticed that sitelinks appear then disappear quite often and are sometimes halved.
