Some days I get very low paying ads from Adsense and some others incredibly high paying ads.

Does anyone know why this happens?

depends upon the type of ads..

and their bids.

i advise u to use channels ..it will give you more clear image of your earning

My adsense earnings are pretty stable. I think if you don't serve many impressions you are likely to have fluctuating earnings.
