What Content Management system is recommended for fully customisable, and quite simple to grasp?
Drupal? Xoops?
Any thoughts on these or others?

I vote Mambo too.

visit Open Source CMS (http://www.opensourcecms.com/) and you can try out multiple Content Management Systems.

Also visit the sites in my sig ... they are all Mambo sites.

Drupal - Serious kit with far better urls than XOOPS

I've built many sites on it and now the 4.5 release is out it is quite a cut above anything else out there (and i've tried many of them..)
