Does GoDaddy require you to fax or sign any documents to transfer a domain to and from its registrar?

no they do it all by email ..all the auth stuff that is.
Easy stuff ..unless domains have privacy on them then it can be a pain untill it is turned off.

I know this is a little late, but there's very little hassle in transferring domains to GoDaddy. I transferred two of my domains from 1and1 Internet to GoDaddy easily.
First 1and1 (or your old host) gives you this authencation key or something, and you register/transfer the domain on GoDaddy, checkout, go in your Domain management and you enter that code, make sure the domain is unlocked and in a few days you should have it in your GoDaddy account.

Actually, it works the same now with any other registrars with the recent introduction of the Auth Code or EPP Code.

The only different is that you are not able to see your authorization code but a link to request it via email, then using the online interface to complete the process
