When I'm redoing my sitemap, should I make all pages the same priority? Is there an advantage to having the main page a higher priority than the subpages? What about the most visited subpage?

Priority is relative to your site. On your site, you could use priority to rank the importance of one page relative to another. So your homepage probably could be of priority 1.0 and say help page could be of 0.1 priority!
Do not make all pages of same priority. Vary it and I seriously think, that you should not even use a sitemap. Let the bots figure out what is important and what is not. This way, you would know which page needs to be looked at and needs more backlinks, otherwise you would never know :)

thanks man...I did a few of those "free sitemap" tools to see what priority all my pages have, and then I am going to modify the one that I wrote...will see if it makes a difference.

If you intend to use priority values, you may want to read this article about XML sitemap priority values (http://www.micro-sys.dk/developer/articles/xml-sitemap-priority-tag.php) .
