What are the chances of signing up with CJ/Similar and get accepted with your blog only as the site you submit? With the idea of blogging about deals?

If you have a professional looking blog I'd say pretty good and what do you have to lose by asking.

Should be no problem although each affiliate program in CJ has a different approval process so it willl be more up to indiv merchants. You should though list all your sites in CJ, or at least all the ones you will have links on.

I don't see that as being a problem. I run a deals site and I think they'd accept you just fine.
