I'm sure someone here can give me a quick answer: when was the last PR update?

And is there any trend data that would suggest when the next will be?

One started Aug. 24, only for some sites, but it froze. It was showing some old sites getting new PR, mostly down.
July 13th was the last PR update, but only for new sites.
October 19th, 2005 if I remeber correctly was the last time old sites got new PR.

Some people have not had an update in 2 years, my last update was in 2005.

Good question.
Due to the fact that typical websites consist of several pages which are created over time, it should be easy to find out:

Normally the index page's PR will not change each time the PR is updated but the PR of newer pages (typically pages that have been created a couple of weeks before the update) will change.

Example: A PR4 index page will continue to be PR4 but the new page deeper down in the hierarchy will climb from PR0 to PR2 or PR3.

I've had old index pages move up, down, and sideways in the last year. Also have had sites that have been banned, un-banned, penalized, un-penilzed, sandboxed, and out-of-sandboxed. One thing I know for sure is that Google hasn't sat on their asses for a year without any updates. For reliable data go here: http://www.mcdar.net/GoogleUpdateRecord.htm
